My friends know I detest beets so they’ll have to pick up their jaws from the floor when I emphasize how much I love Garden Kitchen chef/owner Coral Fodor Strong’s Beet Stem Marmalade. She generously gave me the recipe for that, as well as those for her Radish Leaf and Pipian Pesto, and her easy-to-make and truly delicious whole wheat bread that she grills to use as a delivery system for the two dips. I’ve got the recipes for all of them in my new story for the UT’s food section. They’re perfect to serve at holiday gatherings or give as gifts!
